Very easy to make, tastes delicious.
400g Plain or Milk chocolate
1 x 397g can sweetened condensed milk
100g chopped pecans (optional)
100g dried cranberries (optional)
200g golden icing sugar, sifted
1 tsp vanilla extract
Caster sugar, to sprinkle
You can easily make half the quantity of fudge, although halving the condensed milk is a bit tricky!
Line a large deep tray with greaseproof paper, or two smaller ones. I used two foil trays, or you could even use plastic food storage boxes.
Break the chocolate into small pieces and place in a large heatproof bowl, over a saucepan of gently simmering water, making sure the base of the bowl is not in contact with the water.
Add the condensed milk to the bowl and heat gently, stirring the chocolate until completely melted. Remove from the heat and stir in the pecans, cranberries, if using, icing sugar and vanilla extract until evenly combined.
Spoon the mixture into the tin and level the surface with the back of the spoon.
Chill for at least 2 hours until the fudge is firm.
Lift out of the tin and remove the paper. Dust the surface lightly with the sugar. Using a sharp knife cut the fudge into small squares.
I wanted to give this fudge away, as a gift, so I put some squares in a clear bag, then popped it into a home-made fabric box.
